Chicken shawarma, Arabian grilled chicken in pita bread
Shawarma is
absolutely the BEST Arabian food! No doubt about it. It’s all in how you cook
the meat. It is so…. easy. The overnight marinating is compulsory or the meat
will not be as flavourful.
I use
boneless, skinless chicken breasts for shawarma. Clean and wipe chicken to
remove excess water. Mix the dry spices and rub onto chicken pieces. Marinate
overnight in fridge. Half an hour before grilling, take out and bring back to
room temperature. Heat the oven to the highest temperature. Drain any liquid
from the chicken. Pour 2 tbsp. oil and coat the chicken. Grill for 15 minutes.
Turn and grill for 15 more minutes. Let cool. Slice the chicken as thin as possible.
About the
pita, here we get real fresh ones at very reasonable price. But fresh home
cooked are the best. In this recipe, I have used the store bought kind. This
attempt at making toum was not successful.
It was
AWESOME! But it made a lot. So this time I halved the same recipe and it did
not come together at all… Anyways, we ate it up and taste wise it was fine.
These
French fries are healthy ones. Made in Tefal actifry. This one gadget does cut
a lot of calories. Just 2 tbsp. oil for all that fries! Heat a wok almost to
smoking. Add the chicken and 2 tbsp. garlic mayonnaise and stir-fry quickly for
2-3 minutes. Warm the pita, spread some garlic mayonnaise, add the French
fries, pickles and loads of chicken.
Wrap in
tissue and serve with extra fries and toum!!
