Fried noodles, Indonesian
Stir fries
and noodles are tasty, healthy and quick to make. Quick to cook, I mean. You
need to do a lot of slicing and chopping. This is one dish from which kids
don’t pick the vegetables out. So, it is worth the work.
We need to
get everything ready before starting the stir frying. Peel, seed and chop
tomatoes. Chop chilli and garlic. Slice chicken, shallots, cabbage, carrots and
spring onion. Cut beans.
Cook the noodles in boiling
water for a minute and drain. Rinse under cold water. To make kecap manis, mix soy
sauce, sugar and molasses and bring to a boil. Boil for 3 minutes till syrupy.
Heat the
oil in a wok and stir fry the chicken, garlic, chilli and shallots till the
chicken is cooked through-5 minutes. Add cabbage, carrots and beans and cook,
stirring for 3 more minutes. Stir in the noodles, soy sauce, tomato, spring
onion and kecap manis and cook for 2 minutes. Season with pepper and serve.
