Spicy
breakfast burrito
Burritos are excellent
for breakfast. They keep you fuelled for a long time, the healthy way. I make a
lot of them at once, wrap individually and freeze.
You can use
store-bought tortillas for this. But homemade is so much better. I use this
recipe of soft corn tortillas from KAF.
Instead of rolling
out, I use a tortilla maker. Then cook it quickly on stovetop, in a cast iron
griddle.
To make the filling, mince
the chicken with seasoning. I used “Homemade Seasoning
for Breakfast Sausage”, from here,
You could use any spice mix. I wanted to
make some sausages too. These made very tasty, easy sausages.
Chop onion, garlic,
green chillies, tomatoes and the coriander leaves. Heat the oil over high heat
in a large wok. Add the chicken and fry till cooked through. Remove the
chicken. Heat one tablespoon oil and sauté the onions, garlic and chillies for
about 5 minutes. Add the chicken and combine. Let the mixture get heated. Pour
in the beaten eggs and cook till the eggs are set.
Slice the cheese. Warm
the tortillas. Place the cheese in the middle and add the filling on top. Roll
burrito style.
