Quick and easy Zucchini stir fry
Stir fries
are the healthiest cooked ‘quick meals’ EVER. You can make this even more quick
by choosing not to blanch and peel those tomatoes as I have done. My kids hate
tomato skins. But I skip this step when in a hurry and it still tastes great!!!
Blanch
tomatoes in boiling water for a minute, plunge it in cold water, peel, seed and
chop. Slice the zucchini. You can straightaway slice to make rounds or halve or
quarter lengthwise first and then slice. Peel and chop garlic.
Heat a
tablespoon vegetable oil in a wok. When oil starts shimmering, add the garlic
and stir taking care not to let the colour change. Add the zucchini and keep
stirring for a minute. You can cook it longer if you like, but then zucchini
will lose its crispness. Add salt and pepper to taste and finally add tomatoes
and stir to mix.
Serve hot
with rice or chapathi. May be next time,
we’ll try this in a sandwich!!!
