Easy macaroni cheese with tomato and garlic
Macaroni
cheese is an all-time kids’ favourite.
But just the cheese taste a little bland to us. This version is pepped
up with a garlicky tomato sauce. So, here is THE BEST macaroni cheese bake!!!
Cook pasta
in a large pan of salted water for 8-10 minutes. Grate the cheddar and
parmesan. I used the food processor for the parmesan. Combine the two cheeses. Chop
garlic.
Preheat oven to 200°c. Coat a 7x10 pan (or a 9x9 pan) with nonstick cooking spray or butter. Heat butter and sauté the garlic taking care not to burn. Add canned tomatoes and crush lightly with a spoon. Bring to boil. Add dried tarragon and simmer for 10 minutes for the sauce to thicken.
Spread half
of the sauce in the greased pan. Add half pasta and top with half the cheese.
Repeat layering, sauce-pasta-cheese. Sprinkle bread crumbs and remaining
tarragon on top. Dot with butter and bake for 25 minutes. Serve with some crusty
bread and green salad.
For the bread, I used pan-fried pizza base-
made from olive oil dough. The olive oil dough recipe is from the book,
‘Artisan bread in 5 minutes a day’. It is a great book and the fried bread was
AWESOME!!!
