Sweet khichdi, rice pudding with mung daal


This is the south Indian, Malabar way of making khichdi. It is very easy to make and takes just two main ingredients- rice and mung daal. You can serve this as a dessert by substituting condensed milk for coconut milk!!!!


You need to use raw rice here, not parboiled. I used basmati. Calrose rice or such short grain rice will be fine too. Wash rice and daal and cook well with a pinch of salt. Mash while hot.


Add coconut milk to make it your desired consistency (I used coconut milk powder mixed with water here).  Add a knob of butter or a tablespoon of ghee, sugar and crushed cardamom. Heat slowly, stirring to avoid burning. Serve hot!
