Stove top lemon curd
You will find many lemon curd recipes in the
net. This one is different because it takes a short cut. Other lemon curd
recipes stress double boiling so much. I feel it is time consuming and totally
unnecessary. The stove top lemon curd will be ready in just 10 minutes!!!
This recipe is very easy to remember, as easy
as 1, 2, 3. 1 cup sugar, 2 lemons and 3 eggs. Heat the sugar with juice and
rind of lemons till the sugar dissolves. Do not boil. Sieve to remove the rind
and let cool to room temperature. Sieving is really optional. Our picky eater
is a lemon lover. But since he is picky, he picked off every tidbit of lemon rind
the first time. Now I make it a point to sieve out the rind!
Add the eggs to the room temperature sugar
syrup and whisk well. Start heating over medium heat whisking continuously. The
mixture will start to thicken in a minute. Keep whisking for one or two minutes
more. Soon, it will start spluttering. Add the butter and combine. Take off from heat
and whisk in the vanilla. Pour into jar and let cool. This will keep in the
refrigerator for 1-2 weeks.
