Chicken with fresh pasta soup
This soup gets
done very quickly if you have the fresh pasta already made. I had some
leftovers after cutting out lasagna sheets. You can use the dried once too.
Frozen vegetables also speed up this soup. This is a great make-ahead soup. Get
it ready till combining the ingredients in the soup pot.
Peel and
chop onion and garlic. Prepare the vegetables if using fresh. Mince chicken. Heat
the oil in a wok and stir fry chicken till cooked through. Remove. Add a little
oil and sauté onion till translucent. Add and sauté the vegetables and garlic.
Transfer this to your soup pot along with the chicken, herbs, stock cubes,
butter and flour. Pour the water a little at a time whisking continuously. Bring to boil, add the fresh pasta and simmer
for 5-10 minutes. Take off heat and add the cream/milk and serve.
