Cheesy chicken filling for sandwich/burrito/pie ……….
This is a
multipurpose chicken filling. If you have this ready on hand, you can get a
sandwich ready in just 5 minutes. You don’t even have to think about more
cheese or mayonnaise. Many times this filling goes into our quesadilla,
burrito, pie or even pizza!!!
We use
skinless boneless chicken breast here. Wash and wipe chicken to remove excess
water. Cut into thin slices. Mix the dry spices, salt and garlic. Rub onto
chicken pieces. Marinate overnight in fridge. Half an hour before cooking, take
out and bring back to room temperature. Pour 1 tbsp. oil over the chicken and
combine.
Peel and
dice onions and capsicum. Get the corn ready if using fresh and grate cheese if
you have a block.
Heat a
heavy bottom cast iron wok over high heat. Add oil and swirl to coat the wok.
Put the chicken in and cook over high heat stirring to prevent scorching. Keep
the heat high till chicken is cooked and all water evaporated. Add the
corn-capsicum-onion. Stir fry the vegetables till they are cooked yet
crispy. Take off heat and add cheese.
Cheeses will melt immediately to make a creamy sauce. Serve immediately or
freeze for later.
