Spicy pan-fried fish
Pan-frying
is a very tasty and quick way to make fish. To tell the truth, fish is not an
all-time-favourite at our home. But when done this way, even the “I-don’t like
fish-person” over here eats up much more fish than we wish for!!!!
I keep a
big batch of this spice on hand. The amount I have given makes about a cup of
spice mix. To start, toast whole spices. We do this in microwave. Microwave the
spice (individually) in a plate, in single layer for 1-2 minutes. Do this in 30
minute increments stirring every time. Cinnamon took only 30 seconds and red
chillies took 1 minute. The other whole spices needed 2 minutes each. Let the
spices cool and powder in a coffee grinder. Clean, wipe and slit the fish. Mix 2
tbsp. of dry spice mix with oregano, turmeric
and salt. Rub onto the fish.
Heat a cast
iron skillet. Add 1 tbsp. each of olive oil and butter. When the oil start
shimmering, add the fish. Cover and cook on high heat for 5 minutes. Then lower
the heat and cook till the fish is cooked through. Flip, cook over high heat,
then over low heat. Remove and serve with thin slices of lemon and red onion.
