Armenian rice and noodles, quick and easy
This is
“ramen-ised” version of the famous Armenian rice-noodle or rice-noodle pilaf.
Very easy and takes only 15 minutes from start to finish! It makes an excellent
side dish. We had hot and spicy ramen this time. It came with flavoured oil and
golden fried onion. I added these to rice just before serving and it smelled
awesome!!!
Break
noodles into small pieces by crushing the noodle cake inside bag. Wash rice
quickly and drain. You may omit this step but I am so used to always washing
the rice. Melt butter in a big vessel. Add noodles and stir over moderate heat
till light brown. Take care not to burn the butter. Add the rice and fry till
it starts to change colour. If you had washed the rice, be very careful when
stirring it as it might break easily. Add water and flavouring packets. Add
more salt and pepper if you wish. Stir well. Bring to boil, reduce heat, cover
and simmer 10- 12 minutes. Open the lid to check if all water is absorbed.
Cover once again and remove from heat. Fluff and serve after 10-15 minutes.
