Corn nuggets / corn fritters
This is a snack that
will impress every one!!! None of your guests will believe you spent just 15
minutes to get this to table… and surely it will disappear in even lesser time.
The best thing is you can decide the fat content by choosing to deep fry or pan-fry.
Of course the deep fried ones are crunchier but the pan-fried ones also taste
very good.
Let the corn kernels
come to room temperature. You can start with frozen ones too but then cooking
time will be more. Combine the flours, salt, sugar and pepper in a small bowl. Separate the eggs. Beat the egg whites with an
electric mix over high speed till stiff peaks form. Set aside. Beat the egg
yolks at high speed for about 5 minutes. Add corn, salt, sugar, pepper and both
the flours into the beaten yolk and stir to combine. Fold in the egg whites taking
care not to deflate it. Now decide if you are deep frying or pan-frying. I
divided the batter and did both, this time.
Immediately start
cooking. Heat oil in a wok and add spoonful of batter and fry till golden. For
shallow frying, heat a cast iron skillet to medium high heat. Pour a tablespoon
vegetable oil and spread. Make small pancakes with one tablespoon batter each.
Flip to cook the other side as well. Serve with tomato ketchup.
