Masala chai—tea with whole spices
Masala chai is “Indian
spiced tea latte”. It is very simple to make. You can crush the spices and
ginger to get intense spicy flavour. But we like it milder and keep them whole.
Take equal
parts of milk and water in a pan. Add slices of ginger and whole spices. We add
green cardamom, cloves, cinnamon and black pepper. Cook on medium high flame.
Just as the mixture starts boiling, add the tea leaves. Bring to a rolling boil
and take off heat. Wait for a minute and then strain through a sieve. Sweeten
the tea to your taste and serve!!
