Rice with stir-fried chicken and vegetables
This is strongly inspired by a korean dish
called bibimbap. We have adapted it too much to call it bibimbap!!! But we
loved the combination of rice with all those vegetables.
Bibimbap-
there are so many pictures of this beautiful dish all over the net. I really
don’t know why we didn’t see any till now!!! The presentation is so catchy and
I assure you, the taste is so awesome. There was problem with getting some
sauce ingredients. We needed to do many substitutions. So, here is our
bibimbap.
The
process of making this, is a little lengthy but not difficult. You need to chop
up all those vegetables, mince garlic, slice or mince chicken……… I started with
marinating chicken. Combine all ingredients for
chicken stir fry and let it marinate for at least 30 minutes. Cook rice in
boiling salted water for 10 minutes and drain. Add butter and cover tightly
with a lid and let it steam. Combine all sauce ingredients. Cover and set aside.
Blanch spinach in boiling water till it
turns bright green. Cool under tap water. Squeeze to remove all excess water.
Chop. Combine with sesame seeds, chopped garlic, oil and salt. Set aside.
Get the vegetables cut up and ready. Heat oil in a wok
and stir fry each vegetable separately for 1-2 minutes. Add ¼ tsp salt and 1
table spoon oil each. You will need to stir fry mushroom for a longer time-
till all the water is evaporated. Wipe the wok and stir fry the chicken mixture
till the chicken is cooked through. Get the eggs fried.
Take individual portion rice in a plate or bowl. Pour
sauce to taste on top. Add the chicken
and vegetables in small heaps around the rice. Top with the fried egg!!!
