Crispy, baked nacho chicken fingers
Chicken is
the meat of choice here, especially the breast meat. The kids really love
chicken nuggets and chicken fingers. I have tried making them healthier by
going the ‘baking’ route. But, the crumb coating never crisped up!!! Then I
read about people using cornflakes and all kinds of chips as coating. So, here
is our version of healthy chicken fingers.
The
marinade really gives this an awesome flavour. So, this is best done when you
start a day before. Clean and wipe chicken to remove excess water. Cut into
fingers. Make a paste of the chopped ginger-garlic-chilli-onion. Combine with
salt. Marinate chicken in this overnight in refrigerator. (If short of time, marinate
for half an hour at room temperature.)
When ready
to bake, let the chicken come to room temperature. Preheat oven to 220 °c. Spray the oven grill with
non-stick cooking spray. Crush Doritos well. I used food processor for this. Roll
chicken fingers in crushed Doritos to coat evenly. Arrange on the grill and
cook for 20 to 30 minutes. Serve hot with your favourite condiments!
