Fruit jelly pudding


This is a tasty, easy no- fail recipe that looks really awesome! There is something in here for everyone- creamy custard, fruits, jelly….. We mostly use apples and pears. You can go for mangoes, canned pineapple, grapes or even nuts!! We also vary the jelly flavours.


We need to make the custard first so that it will get some time to set before the jelly topping is poured. So, combine 1 cup milk, cream, salt and sugar in a heavy bottom sauce pan and slowly bring to boil. Meanwhile, combine the corn flour with the remaining ½ cup cold milk. When milk-cream- sugar starts to boil, add the corn flour-cold milk mixture. Bring to a rolling boil whisking continuously. Let it boil for a minute and then take off heat. Add butter and vanilla. Combine well and pour into a glass dish and let cool.


Pour the boiling water onto the gelatin and mix well. As the jelly is cooling, peel and dice the fruits and combine with jelly. Carefully, pour the mixture on top of the custard which must be somewhat set by now. Refrigerate for 24 hours before serving.
