5 minute “any flavour” microwave cake


Microwave has really become a synonym of speed cooking, right? Microwave cakes have always fascinated us. But, “cake-in-a-mug” and “5-minute-cake” always ended as disasters here. They were either very dry or bland or too “eggy”. Anyways, at last, after so many experimentations, we cooked up a really flavourfull and very quick microwave cake base. You can bake it as one big vanilla cake or even better, divide them into 6 coffee cups, add individual flavours and make your own, MUG CAKE IN A MINUTE!!!


For one big vanilla cake, coat a 9 inch, round glass dish with nonstick cooking spray. Line with wax paper. Spray and cover a tall glass also. Stand the glass in the middle of the bowl. Combine the flour, baking powder and salt well. Add all the remaining ingredients to the flour mix and combine well with a whisk. Pour batter into the prepared dish. Microwave for 4-5 minutes. Time will vary for different ovens. So after 3 minutes, you can check doneness with a toothpick. If the tooth pick comes out clean, the cake is done. Overcooking will dry out the cake. Once done, take out and let sit for 5 minutes. Invert and take off the paper. Let cool. One important thing to keep in mind is that, you will not get that tasty, slightly caramelized crust in any microwave cake. So, you can ice the cake if you wish.


This batter will give you about 5-7 mug-cakes depending on your mug. Fill the mug a little more than quarter way up. Resist your temptation to overfill the mug or all your precious batter will overflow and be lost. Fold in your flavourings, swirl with a tooth pick. Sprinkle toppings. Microwave for one minute; add 10 to 15 seconds if you absolutely need to. Wait for at least 10 minutes before you dig in. These are super-hot right out of the oven. Enjoy!
