Quick and easy low fat tuna melt
Store-bought
sandwich bread is a life saver. With
some fresh vegetables and some pantry staples, you can whip up a delicious
sandwich in no time!! This tuna melt is so quick and easy to make. I spread the
mayonnaise on bread instead of adding it to the filling. This brings down the
calorie count. The filling is so flavourful; you can serve it on its own as a
salad.
Drain and
flake the tuna. Chop up the spring onion and parsley fine. Peel and juice the
lemon. Combine all the filling ingredients in a bowl. Set aside.
Butter
one side of each bread slice. Spread mayonnaise on the other side. Build
sandwich in this order- bread (buttered side down), cheese, tomato, tuna
filling, bread (buttered side up). Grill the sandwiches in oven or in a hot
cast iron griddle to melt the cheese. Serve.
