Quick and easy apple cake
This cake
is so easy to make; you can call it a quick bread. Yet, it looks and tastes
really good. You can get this in oven in 10 minutes.
Start
by heating oven and preparing the pan. Preheat the oven to 200°c. Coat a 9x9 inch square cake pan with nonstick
cooking spray. (I use a pan release recipe that is quite popular in the net.
Combine equal volume of all-purpose flour, oil and vegetable shortening. Cream
it and spread in the pan.)
Mix the
flour ingredients in a bowl and set aside. Combine wet ingredients in another
bowl with a whisk. Now, peel and grate the apples.
Add the
flour mixture to the wet mix and combine. The batter will be really thick and
doughy. Water from apples will loosen this later. Finally fold in the apples.
Pour into the prepared pan. Bake for 35 minutes, until a tooth pick inserted
comes out clean. Cool for 10 minutes before removing from pans. Cool and slice.
