Green beans stir fry - easy Indian recipe
You can cook any type of green beans this way-
string beans, Chinese long beans, the broad flat green beans etc. What I used
to do once upon a time was to chop these and patiently cook it over low flame
with very little water for 15-20 minutes. I had to keep a close watch to make
sure that the bottom was not burning. Some years back I had a lucky brain wave!
From then on, I microwave the beans with salt after chopping them up. It’s done
in just 5 minutes!
To start
off, wash the beans well and cut into small pieces. Peel and dice the onion.
Combine the beans and salt in a microwave safe bowl with a lid. Microwave for 5
minutes. Let stand for 5 more minutes. Meanwhile, heat the oil in a heavy
bottom wok. Add the mustard seeds. When they start spluttering, add the red
chilli and curry leaves. Then add the chopped onions and sauté for 2 minutes.
Add the red chilli and turmeric powders. Fry for 2 more minutes over low heat.
Add the cooked beans and sauté over medium high heat for 5-10 minutes, till all
water is evaporated. Serve with rice or any Indian flatbread.
