Orange banana caramel crepe- dessert for breakfast!!!
This is a
fabulous recipe!! A must try for all who like to have a sweet breakfast!!! You
can serve it as a dessert too. The sauce keeps well for hours and so does the
crepe batter. The crisp crepes with the fruity caramel sauce taste truly
awesome!!!
Prepare the
crepe batter first. It is best to let the batter sit for 15 minutes. The flour
will absorb liquid and you may need to thin it out with more milk before making
crepe. Combine the dry ingredients. I used whole wheat flour here. Add the milk
little by little mixing with a whisk. Add eggs and vanilla. You can take a
shortcut and dump all crepe ingredients into your blender and get it done in a
minute. Set the batter aside as you make the sauce.
Combine butter,
sugar and molasses in a heavy bottom pan and heat in moderate heat till bubbly.
(In place of white sugar and molasses, you can use brown sugar. But brown sugar
costs 3 times more than white where I live.) Add the orange juice and zest and
cook for 2 more minutes, stirring to combine. Add the sliced bananas and simmer
for a minute. Take off flame.
Make thin
crepe with the batter. Serve with sauce!
