Chicken with mixed vegetable soup
When the
clock shows you it is 6.30, and you have not even thought about dinner, ‘soup’
is there, to save the day. I love soup! It always helps to have frozen
vegetables and skinless boneless chicken in your freezer. And of course, those
wonderful stock cubes too. If you do have these, this soup will be ready in
just 30 minutes!
Peel and
chop onion. Mince chicken. Heat a table spoon oil in a wok and sauté onion till
translucent. Add the chicken and stir till cooked through. Transfer this to
your soup pot along with the frozen vegetables, oats, water and stock cubes.
Bring to boil and simmer for 5-10 minutes. Meanwhile, heat butter gently in a
pan. Add the flour and stir for a minute or two. Slowly add milk, little at a
time, beating continuously with a whisk. Take off from heat when thickened.
Combine this sauce with the cooked soup. Simmer for a few more minutes and
serve hot.
